Interview
I arrive at 11am to do a tasting, I had sent them an ingredient list that they had ready. I prepared my menu over 4 hours in their kitchen. They allocated some space in the back and I made 2 dishes. I did have to prepare some of the items on the hot line in service but they were accommodating and made plenty of room for me to work.

Interview
My interview was an hour late and then my second round was booked that evening with the expectation I could be there early the next morning again. Everyone acted like it was not crazy to be that late to an interview.
