It was a quick meeting with the executive chef and the head chef. Following day was a stage, where I got to watch, learn and try some of the stuff that they were doing for regular service.

Four-hour interview that puts you on the job. They evaluate your skill based on how well you work in those 4 hours. This is very standard for any chef interview.
