Pros
The money was very consistent, even in the summer. Between working in the restaurant and having catering to supplement your income, there was plenty of money to be made.
Cons
If any part of the restaurant had issues, it would be the main line of the kitchen. The cooks were fast and worked hard, yet there wasn't an actual chef or kitchen manager that would keep them working as a team. This would slow them down a lot and would often snowball into slow ticket times.
