Pros

Meet some great people, learn a lot about the industry at a decent place. Learn a variety of roles if you’re inclined to do so. Host/togo/server/bartender/manager

Cons

Definitely has gone downhill. I have been here more than 6 years. Many of the items we used to make are now pre packaged and already made. (Salad dressings, mashed potatoes, desserts) Cut a lot of corners on food quality (ex; iceburg lettuce in a salad) As for a server role- Company recently started to add server assistants onto a servers tip out. (Because they can keep them at a lower hourly, instead of paying them a higher hourly and lower tipped amount) This has cut servers tips by a third every day. So you have a larger section, working harder and faster, and are making less money. A general rule is for every $500 in sales, a server should make around 100 in tips. With this new way, I can have $1500 in sales and barely make $200 in tips after the new tip out rates. It’s not working. I’ve been here almost 7 years and am looking for a new job, it’s not worth losing money while working way harder. I was here when bonefish used to be so crowded on any given day of the week, now it’s a ghost town. The corporate side has diminished this once great company.

Pros

- more upscale environment and higher standards of service compared to other restaurants in the area - opportunity to be cross-trained and work your way up from a host to a bartender, key, etc.

Cons

- difficult to make a solid income during the slow season/at poorly-performing locations - working every weekend & holiday with very few exceptions
