How would you handle managing employees that are significantly older and more experienced?

Interview
I interviewed with owner. He talked about his goals and dreams are with owning this franchise and his desire to own multiple locations. He asked a few questions about my past employment and about my personal goals. He gave a sense of a family working environment. Overall, a very comfortable not stressful interview.
